Don Andreas Pizza
Ingredients and instructions:
- Hand-stretch pizza dough.
- Add 2 tbsp. of creme fraiche, spread evenly over pizza dough.
- Sprinkle 3 oz. fior-di-latte over pizza.
- Add 1 cup of shredded roasted chicken over pizza.
- Cook in oven.
- Cut into 6 slices.
- Place 2 1/3 cups of corn and chipotle salsa on pizza evenly.
- Cut avocado into 8 slices and place on pizza - 6 around the outside and 2 in the middle.
- Garnish with 2 pinches of cilantro and one lime wedge. Serve with hot sauce on the side. Enjoy!
Corn & Chipotle Salsa
Ingredients and instructions:
- Rough chop 6 tbsp of cilantro and mix with 3 cups of corn nibblets in a bowl.
- Add 2 tsp of cumin to the bowl.
- Squeeze two limes into a strainer, and add the juice to the bowl.
- Puree 2 tbsp of chipotle peppers and add to the mixture with extra virgin olive oil.
- Chop 4 cloves of garlic to 1/16 of an inch and add to bowl, along with 1 cup of diced red onion. Add 1 tsp of salt.
- Dice 1 red bell pepper into 1/4 inch pieces, and add to the bowl. Mix the ingredients until well incorporated.
